Description
Dandelions, taraxacum officinale, were originally imported to America as a food crop, as all parts of the plant are edible. They are rich in beta carotene, iron, calcium and Vitamin A. Young leaves can be used in salads or sauteed, flowers made into jam, honey, wine, tea and syrup, and the roots as a coffee substitute.
Dandelions are also used in tinctures, salves, infused oils, and healing recipes.
